Sauvignon Blanc: 4 expressions of the variety in Chile

May 7, 2026 | Wineblog

Born in France, Sauvignon Blanc has found in Chile’s diversity of climates and soils the perfect home to express its many facets — ranging from mineral and herbaceous wines to tropical fruit profiles, in both dry and late harvest styles. Such personality deserves celebration: that is why the variety has its own date in the annual wine calendar, the first Friday of May.

One of the key milestones in the recent history of this variety is linked to the Casablanca Valley and the vision of our founder, Pablo Morandé. In the 1980s, the renowned winemaker chose Sauvignon Blanc as the first variety to be planted in a region that was, until then, unexplored by viticulture. Today, Casablanca stands as one of the world’s most renowned cool-climate wine regions.

This legacy is reflected in our portfolio: Morandé’s winemaking team continues to explore different styles and terroirs, showcasing the multiple expressions of Sauvignon Blanc in Chile. Below, discover our highlights.

Vitis Única Sauvignon Blanc

Sourced from a specific block within the El Principal vineyard, located in the coldest sector of the Lo Ovalle estate in Casablanca, this wine reveals the purest essence of its terroir. It is crafted using a modern approach, including whole-cluster fermentation, as well as the use of foudres and concrete eggs. Its profile is complex, fresh, and mineral, with citrus, herbal, and white peach notes. Elegant and persistent, it pairs beautifully with fine seafood cuisine, pasta al limone, and asparagus risotto.

Also from Casablanca vineyards, this Sauvignon Blanc precisely translates the influence of the Pacific Ocean: mineral, vibrant, and with sharp natural acidity. Aromas of grapefruit, lime, and fresh herbs lead to a citrus-driven, juicy palate with remarkable freshness, balanced volume, and tension. Ideal with herb-crusted fish and pesto-based pasta dishes.

Pionero Reserva Sauvignon Blanc

Our Yerbas Buenas estate, at the foothills of the Andes, is the origin of this wine. The proximity to the mountains creates a microclimate that favors whites with expressive aromatics and vibrant freshness. On the nose, it shows green apple, white peach, wildflowers, and a subtle herbal touch. On the palate, it is fresh and fruit-driven, pairing well with shellfish and salads with fresh cheeses.

Morandé Late Harvest Sauvignon Blanc

Crafted under rare conditions, when Casablanca grapes are positively affected by Botrytis cinerea, this label combines tradition and finesse. It displays notes of honey, quince, melon, and white flowers, with a dense and persistent palate that balances sweetness and acidity. A gastronomic wine, perfect for pairing with blue cheeses, foie gras, and desserts such as crème brûlée.
