Our late harvests are born from the perfect balance between morning mists, dehydrated grapes, and the noble work of the botrytis cinerea fungus. Produced only in exceptional years and in limited quantities, these wines express the most delicate, artisanal, and poetic side of Casablanca.

An artisanal, traditional wine that respects the rhythm of its processes, requiring patience and care. It is crafted exclusively under specific and rare climatic conditions in the Casablanca region, when part of the vineyards gets affected by Botrytis cinerea, the cause of noble rot.
Variety: 100% Sauvignon Blanc
Origin: El Principal, cool sector of Casablanca
Color: Bright golden yellow.
Aroma: Honey, raisins, quince, melon, and orange blossom notes.
Flavor: Balanced between sweetness and acidity, dense and persistent, with notes of fruit preserve, quince, and mandarin peel.
Food pairing: Terrines, liver pâté, blue cheese, and fruit-based desserts.
Aging: 5 months in barrels

Golden Harvest
Extreme concentration and sublime elegance
This emblematic wine is produced exclusively under very specific climatic conditions, when the coastal fog of Casablanca allows the development of "noble rot" across 100% of the grapes — a condition that has occurred only in the 2000, 2007, and 2013 harvests.
During fermentation, a proportion equivalent to 6 puttonyos of botrytized grapes is added to the must, an essential step that defines its character. With selective harvests and slow barrel fermentations, Golden Harvest achieves a honeyed density and unparalleled depth.
