The inspirations behind Bestiario

Morandé Adventure Bestiario was born about eight years ago from multiple references. And, initially, from an idea that has always intrigued me: that wine, much like society, is made from the sum of different natures and stories.

Its name refers to the book Bestiario by Julio Cortázar, in which distinct characters subtly reveal the archetypes that shape the human fabric.

This publication, in turn, is inspired by ancient medieval bestiaries, where real and imaginary animals were used as metaphors to explain the virtues, vices, and behaviors of our species.

A unique creature in the Chilean wine landscape, Viña Morandé’s Bestiario is also a meeting point of the personalities of its grapes: the strength and body of Marsanne, the acidity and aromatics of Roussanne (both from Secano del Maule) and the unctuous, aromatic character of Viognier from the Casablanca Valley.

A blend that also brings together the experience I gained during my time in the Rhône and what these French varieties reveal across different Chilean terroirs.

Bestiario – from the vineyard to Bodega Aventura

A rather unconventional style, where white grapes are vinified as if crafting a red wine. After manual harvest, we macerate the grapes at Bodega Aventura and co-ferment them in concrete eggs, keeping them on their lees.

This process, which also included daily pigeage to extract maximum aromas and tannins from the skins, allowed us to explore structure and depth.

In a recent interview with Revista La CAV, I shared that at the end of the first vinification, the team and I believed Bestiario would be much fuller-bodied, more phenolic, more “orange” in style.

However, it revealed itself to be surprisingly fresh, with a lightly golden, bright color. Its aromas evoke white flowers, apple, and a citrus hint of lime. On the palate, it is enveloping, with a pleasant texture supported by freshness and a long finish.

Vibrant and thought-provoking, Bestiario is a white wine crafted like a red, made for those who appreciate complexity and great stories.
