CABERNET SAUVIGNON

The grapes for this wine come from El Romeral, our property located in the Maipo Valley, a region well-known for the top quality of its red wines. The clay loam soils of alluvial origin, as well as the moderately fresh and dry climate, bestow the terroir with ideal characteristics to obtain well-structured and highly persistent wines. The vineyard was planted under a high-density system (10,100 plants/ha) to obtain 1 kg of grapes per plant and wines of great concentration and of the highest quality.

After being harvested, the grapes were crushed and underwent a cold pre-fermentative maceration (5º C) during three days to obtain fruity aromas and enhance the intensity of the color in the wine. Fermentation took place at 25-26º C to extract silky tannins. After finishing the malolactic fermentation, the wine was aged for 12 months in previously used French oak barrels. After bottling, the wine was left to evolve during other six months before it was released into the market.

PINOT NOIR

The grapes for this wine come from our property called Belén, located in Casablanca. The clayish and granitic soils, of limited fertility, as well as the valley’s maritime influence allow to produce grapes of great aromatic expression and enormous freshness. The vineyard was planted under a high-density system (10,100 plants/ha) on slopes facing south and south-east to achieve the best solar exposure during the coldest hours of the day. They are trellised and pruned to the vertical shoot position. The scarcely irrigated vines deliver grapes that show a balanced growth and high quality. Harvest takes place between mid- and end-March.

The carefully selected grapes were softly crushed, keeping approximately 20% of whole berries for an enhanced fruit expression. After a pre-fermentative cold soak of three days, the must was inoculated with selected yeasts to start the alcoholic fermentation. The wine completed the malolactic fermentation in barrels of 300 and 500 liters where the wine was kept for 10 months. After bottling, it was aged for six months before being launched to the markets.

The grapes were harvested by hand and, to obtain the juice, they were pressed in a pneumatic press. The must was further decanted at a low temperature to reach the greatest clarity. It was then fermented with selected yeasts in stainless steel tanks at 10-12º C, thus allowing to develop the entire potential of the variety, with pronounced citric notes. To preserve its freshness and increase its volume on the palate, the wine was kept on its finest lees until its bottling.

GEWÜRZTRAMINER

The grapes for this wine come from our property called El Ensueño, located in Casablanca. Its sandy and clay soils of low fertility, in addition to the valley’s cool and maritime climate, give rise to fresh and very aromatic grapes. Once in the winery, the whole grape clusters were crushed and, after pressing, the juice was cold decanted to obtain a very clear must. Fermentation was carried out in stainless steel tanks with controlled temperature and the wine was bottled at an early stage to keep a lively fruit expression.
